Like every other profession, hierarchy is inherent to the profession of a Chef as well. The Executive Chef, or the head chef, is the authority and the top personnel of this field. And the interns or junior chefs at the bottom of the rank. A Sous Chef is the one who is in direct association with the head chef, and may be also called his assistant. He is the second-in-command, and the boss in the absence of the head. 

A Sous Chef’s job is managerial and creative at the same time. A vital role is played by him in the kitchen. As a manager, he allocates duties to the other chefs, manages the menu and the time, handles and supervises the operations on a daily basis, and interacts with the juniors. He also discusses issues of concern with other departments of the establishment, so that work can be done in cooperation, and also decides on expenditure and budget with the authorities. He also interacts with guests for feedback and reviews. The creative element of a sous chef gets reflected at meal times, when he either supervises the meals and their presentation, or does it himself. He also designs the menu. The work also includes ensuring hygiene and superior quality. During the absence of the executive chef, he is in charge of deciding the menu, and exercising full control on the subordinates so that work gets done efficiently and on time. 

To reach this stage in his career, a desirous student should firstly do a bachelor’s in hotel management, and then if interested can go in for higher and specialized education. Only with more years added to his work and specialized training, does a junior chef get on to become a sous chef. 

As mentioned earlier, a sous chef should possess managerial or operational, and creative skills. It is a multi faceted job, and he should be willing to take up the challenges thus. He should be able to lead and command. So he has to be stern and able to handle his juniors. But he should also be diplomatic and willing to listen to the latter. It is a physically enduring job with long hours, which are quite stressful. Thus he should be ready to take the stress and handle the pressure. And in spite of it all, an ever optimistic attitude and a perpetual smile while serving, characterizes a sous chef.

The scope of this field is quite good, and even monetarily, it is a paying job. Amity offers Bachelor’s course in Hotel Management (BHM) and at the PG level (only for graduates), it offers an MBA program in Hospitality Management. Application forms should be procured and submitted along with mark sheets, certificates and testimonials at the campus. 

Banarasidas Chandiwala Institute of Hotel Management & Catering Technology, New Delhi :

This institute, established in 1999, is run by the Banarsidas Chandiwala Sewa Smarak Trust Society, and is approved by AICTE. Application is open for students who have passed Class XII with a minimum of 50%, having English as a compulsory subject and a pass in it individually. Admission is based on the common entrance test conducted by the university. 

Dr. Ambedkar Institute of Hotel Management, Catering and Nutrition, Chandigarh :

  1. Sc in Hospitality Management and Hotel Administration, is open for students who have passed 12th exam. 

Dr. D. Y. Patil Institute of Hotel Management and Catering Technology, Mumbai :

The Department of Hospitality and Tourism Studies of the Padmashree Dr. D. Y. Patil University, offers three years Bachelor’s program in Hospitality & Tourism Studies. The students who have passed Class XII, in any stream – science, humanities, commerce, home science, or any vocational course, are eligible to apply.  

Rizwi College of Hotel Management, Mumbai

The institute is recognized under AICTE, and is affiliated to the Mumbai University. It offers are a 3 year B. Sc in Hospitality Studies, degree awarded by Mumbai University. Applicants should have at least 50% in XII, and admission is made on a written test, followed by extempore and interview. The college considers academic record as well as ECA for admission to all courses. The other course offered is Bachelor’s of Hotel Management and Catering Operations, granted by the Yashwantrao Chavan Maharashtra Open University; admission is based on entrance test, group discussion or extempore and then the interview of selected candidates. And it offers B.A in International Hospitality Administration, the degree awarded by IGNOU. For this also the criteria for admission is pass in class XII, and performance in the written test, GD or extempore, and interview.

The Kitchen – Chef

Responsible for the preparation and presentation of food. It includes the main course, snack preparation, starters, soups, bakery products, desserts etc. 

Bartender

The serving of beverages, in a fashionable presentable and delectable manner is the job of a bartender. These include alcoholic and non alcoholic drinks. 

Front Office

Important activities here are – receiving guests, making room reservations, the handling of correspondence, preparing bills, and accounts maintenance. The head of the department is the Front Office Manager or Executive House-keeper. Others include the Assistant Manager, Lobby Executive, Front Office Supervisor, Information Assistant, Receptionist, Bell Captain, Bell Boy, Doorman etc. 

House Keeping

Event Manager

Organizes all events taking place within the hotel premises and related to it. This includes banquets, parties, conferences etc. And special functions. The work is significant as the repute of the hotel is also dependent on how the event is organized and managed. 

General Operations

The General Manager is the in-charge. He is the coordinator and the administrator, and responsible for staff management, for financial control, the provision of services, control of quality, and customer care.  

Sales and Marketing

This department gets in touch and maintains relations with travel agents and tour operators, and corporate clients, to sell hotel facilities. Advertising and Public Relations is also managed by this department. 

Catering 

This includes the serving of food – it may be at the restaurant, in lounges, or rooms. 

Accounting Department 

All financial transactions are taken care of by this department. It deals with purchase of materials, offering of services to guests, compiling information for budgeting, pricing of food and services, etc. 

Engineering / Maintenance Department 

Only engineers are employed for the maintenance department. The work deals with the building and maintenance of various machines in the hotel premises. 

Security department 

It provides security to guests and their belongings.
